Our Prawns

Each harvest yields different sizes: Large, Extra Large and Jumbo.

Our products cost more because it costs more to do things the right way... However, our product has a ton of value beyond just your average shrimp tail!

Before you discard the heads and shells, consider:

  • Most flavor in animal protein comes from their fats. (Think of prized fat marbling in Wagyu beef, for example).

  • Most of the healthy fats in shrimp and reside in the "head" or body cavity, which is usually discarded.

  • As the "head" is cooked, an organ called the hepatopancreas ruptures and releases bittersweet lipids and flavor into the rest of the shell. 

  • Since our prawns are guaranteed clean and fresh, you can trust that fat-soluble pollutants, heavy metals and antibiotics are not a concern. 

  • We encourage you to cook with whole prawns, or if removing the heads, that you use them to make a stock!
